I do think they should let sneak also let you backstab or something and finish the target off instantly or knock them out unconscious to be able to loot their body (though I guess that would make pickpocketing useless). I haven't gotten into the pickpocket/sneak user yet but from what I've seen and heard it's just a small little fun you can have in the beginning but isn't that useful later on since it will become more combat oriented. Magic and bow/crossbow are merely supplementary to a melee user. I'm getting the same feeling with magic user build you still have to become somewhat of a melee master. You can't go pure bow/crossbow dex build really unless you just go through the game normally chapter by chapter. There appears to be many pros but the three cons actually give a big impact to your gameplay letting you know your time to explore and fuck around will become more limited over time and eventually you will have to start relying on melee weapons and should invest into strength more. Bow training only seems to go for bows not crossbows so even if you find a wicked good crossbow it won't fire as fast as your bow.

Just know how much arrows/bolts in the game are limited they do not replenish (unless chapter changes I think) Sure you could get more looting off NPCs but when you're focusing on bow/arrow usage you won't find many ways to kill NPCs without getting killed yourself by the surrounding NPCs so I've refrained from that. Arrows and bolts that you've shot at enemies disappear meaning at some point in that entire colony all the arrows/bolts will disappear. You will eventually run out of ammo especially with the lack of killing power.Melee weapons however increase on strength + weapon damage. Your killing power is very low since bows/crossbows only go by their weapon damage, the strength or dexterity does not increase it further.You can snipe enemies that has no ranged capability on top hills and cliffs they either can't reach or have difficulty getting to.NPCs and monsters have low arrow protection so they will get take damage even if it's a little no matter how much armor they have.Of course this doesn't work with NPCs nearby that has crossbows/bows. You can lure NPCs away from others to single them out.You can kill enemies far away before they get to you but if your bow damage isn't that high they will close the gap too quickly.Going pure bow isn't very good here's what I found out. I killed Mordrag to get his long bow which is the best I could find right now. I don't know where to find any good bows.
